Catalan Cream Roll

  1. Place Tradicional roll on an oven tray.
  2. Proof for 2 hours and then bake at 180ºC for 6-8 minutes.
  3. Once fresh out of the oven, left to cool and sprinkle glass sugar.
  4. Take the roll and cut it in half.
  5. Spread pastry cream on the surface and add generous amount of sugar on top. Brown the sugar layer using a blowtorch.
  6. Left to cool, then add whipped cream and seasonal fruits.
